Frito Chili Soup

I am not a cook who can improvise. I follow directions and instructions. Something must have come over me when I wanted to try a spur-of-the-moment dinner! With ingredients I had in the pantry I thought I would make a chili soup. In order for this not to go wrong, I had to keep it simple. 

I poured the chili, diced tomatoes and corn into a saucepan on medium-high heat. I mixed in mozzarella cheese and added Fritos.

Stirring occasionally until the soup was done, I then served in bowls and added toppings. I scooped some sour cream on top and enjoyed. 

It was so yummy! It turned more into a Mexican/tortilla soup. Yet the chili made it very unique. For an easy, cheap and quick improvised meal, I think I pulled it off pretty well! 

 The ingredients: 1 can of no beans Hormel Chili, 1 small packet of Fritos, 1 can of diced tomatoes, 1 can or whole kernel corn and mozzarella cheese (optional)

 In a large saucepan, empty the whole can of chili, corn and tomatoes on medium-high heat

Slowly add mozzarella cheese, as much as you would like 

 Stir until cheese has melted and all ingredients are combined 

 Once soup is ready, crush the bag of Fritos and empty into soup and stir. If you want the Fritos softer, then leave in pan longer

Serve with sour cream and any other additional toppings you want to add….Enjoy!

Ingredients:

  • 1 can of no beans Hormel Chili
  • 1 small packet of Fritos
  • 1 can of diced tomatoes
  • 1 can or whole kernel corn
  • Mozzarella cheese (optional)
  • Sour Cream (optional)

Directions:

  1. Pour the whole can of chili, diced tomatoes and corn into a large saucepan
  2. Heat over medium / medium-high setting
  3. Slowly add mozzarella cheese, as much as you would like
  4.  Stir until cheese has melted and all ingredients are combined 
  5. Once soup is ready, crush the bag of Fritos and empty into saucepan and stir
  6. If you prefer the Fritos softer, then leave in the pan longer
  7. Serve with sour cream and any other additional toppings you want to add
